Abstract
Randomly selected leg samples of chicken collected from two sources viz., road-side/market slaughter (MSC) and scientific / hygienic slaughter (SSC) were subjected to study the pr o x im a t e c om p os it io n , ph y s i c- c h em i c al , microbiological and organoleptic quality . Six trials were conducted. No significant differences were found in proximate composition and pH of meat from two sources, but WHC differed significantly (p≤0.05). Microbiological and organoleptic qualities of SSC samples were found to be superior compared to MSC samples.
